Do these products protect me from currency risk?

Only the eurozone ones. Broad Europe products include the UK and Switzerland, which have their own currencies, so there is an exchange-rate effect there even when the product is denominated in euros.

Is the Spanish stock market in these indices?

In the Europe and eurozone ones, yes. The EURO STOXX 50 only takes the largest eurozone companies, and Spain contributes a handful. The detail depends on the specific index in each row of the table.

Can I track a Europe product that isn't on this list?
